Lye peeler

The lye peeler is designed to remove the skin from mackerels before cooking and canning and is also used for deskinning peaches and apricots.  The product is conveyed continuously through a heated lye bath for a few minutes, until the skin dissolves. The product then continues to a bath of acid to neutralize the pH level. Between the two sections the product is rinsed with fresh water to wash off skin residues.
